Christmas Cookies

I still don’t bake but I put my name on the list for dessert, for every party. I may have been imbibing a bit too much of the holiday cheer because I also signed up for appetizers, for every party and I get to help cook the dinner for my family! I am excited about the appetizers and dinner but the dessert has me stumped. Last night was an informal gathering so I got off easy there but the rest of the events are more formal so I feel like my food needs to be more formal.

For my casual mood food I decided on cookies and sliders. I picked out a package of Chocolate Chocolate Chunk cookie mix and a package of Snickerdoodle cookie mix and a package of sea salt caramel baking chips. Dessert was totally Betty Crocker but I did dress her up a little. I had peppermint chips left from some other thing that I had made at some point so I added those to the chocolate cookies and I added the caramel chips to the ‘doodle dough before I rolled them in the cinnamon sugar. My sliders were also not an original idea but I did put a little of my spin on them. King’s Hawaiian rolls sliced in half and filled with a slice of ham, Swiss cheese and a garlic and herb cheese that I found. Wait, it gets better!! I made a sauce of Dijon mustard, garlic aioli, worcestershire sauce, plain mayo and a sprinkle of smoked jalapeno seasoning and I spread it liberally on the rolls. I should have said that I put the sauce on the bottom of the rolls then added the ham and then the cheese was the top layer that sort of acted like glue to keep the top bun attached. And for even better I made some garlic butter and brushed the tops of the rolls with it before I put them in the oven.

My contributions to my family dinner is going to be green bean casserole, cranberry sauce that comes from a can because that is the hubs favorite and to keep being honest, it’s my favorite too, bread and dessert. I am going to make some beer cheese bread and a layer cake for that but I want to do a fancy cake. Something like a black forest with the chocolate and the cherries and I can make a chocolate cake and a cherry cake and layer them with the cherry filling… have I mentioned that I have been watching The Great British Baking Show and I feel like I can make anything that they are making. I am probably over estimating my skills but I am going to give it a go.

While I am being honest I will probably make those ham rolls as appetizers all the way around. They are fast and easy to make and they are super tasty and I already have most of the stuff but what about dessert???
