One-Pot Pork Sausage and Kale Pasta with a creamy garlic sauce. Sounds super delicious! Sounds super easy! One pot! All the ingredients sent right to my door! No shopping, minimal dishes, let’s get started!!
The ingredients they sent: 10 oz of pork sausage, 8 oz cavatappi pasta, 2 bunches of kale, 1/2 cup shredded parmesan cheese, 4 oz cream cheese and 1 head of garlic. The ingredients I used from my pantry were salt, pepper, 1 tbsp butter, 1 tbsp flour and 2 tsp of cooking oil. The only prep work required is chopping the kale and garlic and taking the casing off of the sausages. This just keeps getting better and better!!
The directions they sent: Bring a medium pot of salted water to a boil. Remove the sausage from the casings. Remove any large stems from the kale and cut into bite-sized pieces. Peel and finely chop 3 cloves of garlic.
Once the water comes to a boil add the pasta and cook for 7-9 minutes until al dente, reserve 1 cup of the pasta water and then drain.
Once the pasta is drained, use the same pot to heat a drizzle of oil over medium high heat and add the sausages, crumbling it the best you can and cook for about 5 minutes. When the sausage starts to brown add in the kale, another bit of oil and a healthy dose of salt and pepper and cook until the kale is tender which should only take a few more minutes. Once the kale is to your liking scoop the mix into one of the bowls that you are gonna serve the finished dish in and stick it in the oven to keep warm while the sauce gets made.
In our same pot we are now gonna add about a tablespoon of butter and the garlic and get it sizzling over medium high heat. When the garlic starts to brown add the flour and whisk it around until all of the liquid has been absorbed and the flour starts to brown. Whisk in 3/4 cup of water and keep whisking until all of the flour has been incorporated and it starts to thicken just a bit and bring the mix to a simmer. To the simmer add the cream cheese, half of the parmesan cheese and another pinch of salt and pepper, make sure that all of the bits from the sausage and kale get mixed in too, we don’t want to leave any flavor in the pan!
When the sauce is looking and tasting tasty add back in all of the other stuff and stir it around in the sauce making sure to get everything coated with the sauce! This is the step where you will use that pasta water that was saved earlier, adding that magical starchy stuff will help the sauce really coat the pasta and and will give the sauce a kind of sheen that makes for good close up pictures!
Divide into bowls, top with the rest of the cheese and enjoy!!
Most of the ingredients are changeable, say if you have chicken sausage or ground beef that would be perfectly ok! Same with the noodles, elbows or bowties or shells would work wonderfully as well! The kale doesn’t have to be kale or greens at all, zucchini or mushrooms would be tasty too!!
